Summary

Information on foods and nutrition is essential for use by extension workers. The authors have sought to provide information on most of Uganda?s foods and to discuss nutrition in a local context. The book aims to enable extension workers to support community activities by disseminating information on critical issues such as production, environmental management and health. Agnes Namutebi is an Asssociate Professor and Head of the Department of Food Science and Technology at Makerere University. She has been involved in training district extension staff and nutrition security. John H. Muyonga is an Asssociate Professor and Head of the Department of Food Science and Technology at Makerere University. He is involved in a series of outreach activities involving the health and nutrition welfare of vulnerable groups.
